When an abundance of apples come in during the fall harvest season it can be daunting deciding what to make with all of them.  Canning apple sauces, making cakes and ciders. Oh all the yummy delights. I think back to the Old Disney Cartoon of Johnny Appleseed and the lists of delicious apple delights sung about.  We have quite a bit of apples again this year from folks here and there overrun with apples. Quite a blessing for us really as we love them.  I compiled a list of some of our favorite recipes to make though the fall and winter. I freeze bags of diced and sliced apples each year ready in 1 and 2 cup increments to defrost and cook with on any whim.

For breakfast there is nothing more humble then the pancake. There are many versions of this early morning staple, one being the fritter. Like in this recipe for Apple Fritters, fruit is added to make these chunky style pancakes more then just a vessel for butter and syrup. Serve up with a crispy fried side dish of  Apple Scrapple to make a wholesome breakfast or breakfast for dinner.  Apple Butter, another addition to the table can be liberally slathered on toast or fritters, even the scrapple gets elevated by this old fashioned favorite.

Apples make their appearance in savory dishes all the time. Apple Ham Casserole makes a hearty meal to warm the bellies of your family and friends as it's a great take along dish for pot lucks. Lunches also get a good dose of apples in this Chicken Salad recipe which is full of fruits and veggies. Sides get some apple too as they make their appearance in lunches and on the dinner table in other ways such as this awesome Apple Salad.

Apples are no more prevalent then in the realm of the sweet. From Crystalized apples that make for pretty garnishes to unique Apple Soup which will delight any guest.  Apples are kings of the sweet world. Often a used in desserts, they can be baked alone as Stuffed Apples or into iconic treats such as Apple Cake and Apple Strudel .

A small sampling of the amazing variations apples can be used. They are not alone though. Sub out pears in any and all of these recipes. They are similar in texture, bake just as nicely and give a different flare to your fall menu.
