Spiced Carrots, Vintage canning recipe, vegetable

Carrots are one of those prolific crops that it doesn't seem like you planted that many until you pick them.  Then they can be a little overwhelming to deal with.  They get frozen or stored in a cool place and sometimes canned in water. This canning recipe though harkens to the tastes of carrot cake with it's cinnamon and clove. Sweet with a touch of tang this unique recipe is a great way to put up carrots and would look so pretty in a jar when using different colored carrots.
I would slice the carrots into rounds or sticks to fit more into each jar and then serve with roasts and other heavy meals that could use a little brightness to the meal.
