Connecticut Election Cake, Vintage baking recipe
I had no idea what Election Cake was, so I did a little research on this vintage cake recipe. Election or Training Day Cakes are a New England novelty that harken back to the colonial days. Made in honor of the elections being held which was a very festive day for the Puritans. Since they did not joyfully celebrate holidays such as Christmas this was their time to let lose. More modern versions contain rum but this was from an older book that was celebrating historical recipes from around the United States so it is a more historically accurate recipe despite its use of vanilla extract.
By no means is this a light and fluffy cake. It is in fact a dense, fruited cake leavened with yeast instead of powder and soda. The use of a tube pan in this recipe is important, due to the density of this cake a square pan would not bake correctly at all leaving over cooked edges and undercooked center. A bunt pan would also be a very good option as would smaller individual pans or muffin tin.
