I will admit that liver is not high on my list of meats to eat. I also get quite a bit of it from the butcher though when we split a cow with some friends. I in fact have a good 10 lbs. of it in the freezer right now.  Generations ago these church ladies would never have let a good cut of meat go to waste.  Here the beef liver is cooked up much like a crab cake. Top off with sauce of choice and this very strong flavored meat becomes and delicacy.  Let's also admit that a slice of bacon on each one helps too! I have about 400lbs of beef in my freezer.. lol I wish I was joking or exaggerating but we split a cow at the butcher so we have a lot of beef right now.  This recipe is baked in the oven but it is now a go to for my crock pot. Where I grew up we all knew about fudge. Ate it here or there but it wasn't the most popular of desserts or candies. Then I moved into Pennsylvania and all that changed.
