Creamy Kale and Potato Salad

Creamy potato salad is always a hit. Sometimes though one may want to change it up a little bit.  Potatoes being a base that absorbs flavor well makes them the perfect ingredient to play around with.
We added some fresh green flavors here with some kale and a twist with the herbs to add a bright flash to the pallet with lemon.

Ingredients:
2 cups finely copped kale
2 lbs. small potatoes boiled and diced
small bunch of green onions
1 1/2 cup garlic mayo
1/8 c white wine vinegar
2-3 tbls. lemon herb mix

*Prepped potatoes and kale get mixed in a bowl with the green onion. In another bowl mix the mayo, vinegar and herb mix and pour over chunky ingredients. chill and serve.


* to prep potatoes wash them clean and boil in slated water until tender but not mashable. Cool and dice. We leave the skins on because we like them but they can be peeled if desired.
