Ricotta Pie, Sweet Dessert vintage recipe
Vintage recipes are often a little strange to us modern bakers. Ingredients we might not often use were the norm. In this case no modern thickeners meant that rice was used to bind a make the filling thick and creamy. Not a low carb recipe at all by the way.
Sweet and creamy ricotta is baked up with rice in a cheese cake meets rice pudding concoction that will bring many accolades at any potluck, function or baked goods sale.
Top off with fruit if desired. Canned or fresh in a tart type style. Pineapple is a lovely contrast to the sweet and creamy adding a bright fresh tang.
