Liver cakes, vintage recipe

I will admit that liver is not high on my list of meats to eat. I also get quite a bit of it from the butcher though when we split a cow with some friends. I in fact have a good 10 lbs. of it in the freezer right now.  Generations ago these church ladies would never have let a good cut of meat go to waste.  Here the beef liver is cooked up much like a crab cake. Top off with sauce of choice and this very strong flavored meat becomes and delicacy.  Let's also admit that a slice of bacon on each one helps too!
