No Bake, gluten free banana bread breakfast fudge

It's the summer. No one wants to bake banana bread. Everyone in our house wants banana bread including the kid with the wheat allergy. So what is a mother to do? Well, look up on Pinterest all the no bake breakfast bars and goodies one can find and then start playing with them to suit our tastes.  Many of them have protein powders or artificial sweeteners for lower carb and since this isn't for me I didn't worry about those.  As we played I also began making our own nut butter because seriously they cost an arm and a leg for a tiny little jar!  They are easy to make by just adding a couple tbls. of water and one of coconut oil to 2 cup nuts and zip it up in the food processor. Bam done! Now some nuts are dryer then other so you may have to play with the wet ingredients to make a paste you like in texture. The runnier the paste the less firm the fudge so keep that in mind.  This recipe comes out very fudgy in texture though as with all gluten free maybe not as smooth as if it had been made with a wheat flour but just as yummy.

Ingredient List:

bananas
walnut butter
rice flour
vanilla
brown sugar
cinnamon
walnuts
cream cheese
powdered sugar
milk of choice







Fudge:
  • 4 mashed bananas
  • 1 cup walnut butter
  • 2 cup rice flour (coconut 1 1/2 cup)
  • 1 tsp. vanilla
  • 1 cup brown sugar (granulated is good too)
  • 1/2 - 1 full tsp. ground cinnamon (mine like a lot so go to your tastes)

Blend wet ingredients with sugar and then add flour. Put in a parchment lined pan and let chill until fairly firm then spread on icing.




Cream Cheese Icing:
  • 1 package 8oz cream cheese
  • 1 tsp. Vanilla
  • 2 cup powdered sugar
  • 2 tbls. Milk of choice

Blend well until smooth and spread on fudge.  Topping with chopped walnuts is optional.

Now we cut 24 pieces as servings but the adults and big kids eat 2 at a time usually.  I'm sure it will keep in the fridge no problem for a few days but it has never lasted more then 2 in our house.
