Do tell me if I share too much but, this is the time of year my feet take a big hit. Hubby starts complaining my feet sound like Velcro on the carpet. Least he used to. I have to say this is a rather interesting recipe to me. I have never seen one that used a vegetable cocktail as a liquid. Not sure what that is? Try V8, which with all the flavors they have now, many interesting combos can be made. Personally the spicy version sounds good to me.

So what do you do when you get handed 7 pineapples? You play with recipes and this one my be one of my best salsa recipes yet. The kids ate it quick and it was so very tasty on top of grilled chicken. If I could cook fish in the house you can bet I would have a nice grilled piece of halibut smothered in this. Pineapple Salsa Recipe 1 fresh Pineapple chopped small 1 cucumber seeded and chopped small 1 small red onion chopped fine 1-3 jalapeños chopped fine (to taste) 1 tsp. cilantro 1/2- 1 tsp. fresh grated ginger salt to taste Pretty simple. Core and deseed fruits and veggies. Chop small and mix everything together. Now we like a lot of heat so I kept adding jalapeño for a mild version use just 1, the spicier you like the more you add, 1 or 2 more or kick up the heat by replacing with a nice habanero. Scalloped Oysters sound so very tasty. So many people are scared off by these tender morsels of the sea and I really don't know why.  This is actually on my list to cook when I am visiting family and hubby is not with us. A very simple casserole that is creamy and delicious.  Serve with some good hardy bread to sop up the milky sauce. Gluten Free Conversion: This is an easy one. Just swap out the crackers for your favorite GF version. I really like the herbed versions for recipes like this. If you are completely not into oysters other seafood can be subbed out. Crab, shrimp, clams, muscles anything really. Due tot he simple nature of the recipe it is very easy to adapt. This corn pudding of sorts is a simple and tasty side dish that pairs well with so many main course meals. From your Thanksgiving table to chili night baked corn can be served up as your carb. Great topped with stew, smothered with taco fillings or just plain with a little butter. A good down home dish. Note the recipe calls for canned or fresh corn. Fresh is always best, but a defrosted frozen corn works just as nicely. I know most people think of short cake as a spring dessert with fresh berries, and it is a fabulous one for sure. One that can adapt to be a fall recipe too.
