Summer Squash and Green Bean Salad, quick and easy salad
The season is here. The plants are giving up their bounty and we have a ton of fresh veggies just waiting to be used. We can and freeze and bake away but there is nothing like a fresh salad made with just picked veggies from the garden. This recipe uses some of the more prolific producers, the yellow summer squash and green beans. Combined with a sweet balsamic dressing and salty cheese this salad is amazing. Great for take along to parties and bar b ques. This side dish pairs well with your steak dinners or burgers. We have also added steak strips or chicken to this to make it a one dish meal.
Ingredients:
2 small yellow squash
1/2 - 3/4 lb. green beans
1 small red onion
2 cloves garlic
3 tbls. balsamic vinegar
3 tbls. honey
4 tbls. olive oil
4 oz. crumbly feta or goat cheese
salt and pepper to taste
Dice squash into 1/2 in. cubes. String beans and cut into half in. sections then dice the red onion and garlic. In a bowl mix together the balsamic vinegar, honey and olive oils and whisk well. Pour over veggies and mix well. Add crumbled cheese either on top or mixed in. Salt and pepper to taste. We use a local hand made goat cheese. It's herb mix can vary a bit so we never add salt and pepper until we have tasted it first. Fetas can also have varying amounts of salt so again taste and then add.
