Pickled Beets, vintage recipe

I know I have a lot of pickling recipes right now but tis the season to put up the harvest! For those who have beets this is a yummy favorite! They can be canned in a pressure cooker, just follow your canners directions for beets or if not use for potato.

This is a wonderfully sweet and sour recipe that brings a nice brightness to the sweet earthy taste of beets. It is imperative to clean them very well before cooking with them.

Don't forget not to toss out the pickling liquid when done. Here in PA beet pickled eggs are a major thing! Heat that pickle juice up and float some peeled hard boiled eggs in there for at least two weeks. Out come these super magenta colored eggs that are so very yummy! They also look very pretty on a buffet plate alternating white plain boild egg and pickled.
