Globs or Whoopie pies, Vintage PA Dutch recipe

I grew up In NJ. We did not have whoopee pies or globs as they are called in parts of PA.  When we moved to North Eastern Pennsylvania in the late 90's these were a new experience for us. This vintage recipe from a church cookbook from southern PA is the quintessential black cake with white filling Glob. The name glob, as it was explained to me when we were visiting Old Bedford Village a few years ago, comes from the fact that globs of cake batter were put on the pan to bake. Simple as that.


If you are like me and just the thought of whipped Crisco kills your desire for this dessert a cream cheese filling is very, very good with these cakes and much preferred in my mind. I use the recipe for the icing from the breakfast fudge recipe.
