Sauerkraut and Noodles, Vintage frugal recipe
There was a time in this country when people had to make due with what they had. Food was a necessity and those who were responsible for feeding their families had to play around with textures and flavors. Some of that playing I am sure ended badly and we will hopefully never know the dread some folks had of the dinner table. Other creations became favorites. I am not sure who thought of adding noodles to their kraut. Or using American cheese to cover the top of it but they made due with what they had. I can just imagine a housewife during the depression looking in the pantry and seeing a jar of homemade sauerkraut, flour, eggs and bacon and just trying to figure out what to make. It was probably a very humble meal, nothing fancy, nothing special but one everyone was thankful to have. In our area now this is a side dish, preserved by history in an old church cookbook remembered by only the oldest generation as being made out of need.
It is often served up with pork as part of the new years celebrations.
