Creamed Peas and Cauliflower
Simple to make side dishes are great for weeknight dinners. Creamy and savory sauce makes coaxes even picky eaters into eating their vegetables. I prefer fresh veggies which actually means I need to adjust the recipe a bit. I use only milk but a little veggie broth would be a good additive if one wanted to. Due to an allergy I omit the Worcestershire sauce as well as I found the vegetarian version to not quite work in this one.
I have found that this side is a great partner for chicken and other poultry as well as pork chops. It really can go with any roast meats even heavy flavored game meats.
Not only a side dish this recipe is an amazing multi-tasker! Use as a filling for pot pies. Just add some diced chicken or ham and add to a pie crust or cover with some phyllo dough. Bake as usual and ding, ding, ding you have a hearty, creamy pot pie! Rather something even quicker? Keep cauliflower cut small and top off a plate of fettuccine for a veggie packed pasta dish.
