Classic Veal Parmigiana, Vintage Italian Dinner Recipe

It used to be the staple of Italian cuisine in every restaurant I was ever in.  Slowly through the years the veal was phased out off the menu and replaced with chicken.  It's good but it's not the same thing. These cutlets are good with pasta, rice, veggies or on a really great bread as a sandwich.  
One of the secrets of this dish is the quality of ingredients. Well seasoned bread crumb, top notch tomato sauce and real Parmesan cheese, not the powdery shelf stuff. All these are what makes for not a great dish but a one that is magnifico.
