Classic Rhubarb Pie, Vintage baking, old fashioned dessert recipe, gluten free version

Old Fashioned and as classic as it comes let me introduce you to the humble rhubarb pie. Usually paired with strawberries, which is always delicious, this pie the rhubarb is on it's own with a fresh hit of orange zest. The pie is thickened with tapioca making it perfect for gluten free people to be made in a nut crust.  The basic crust can be used for those without the worries of gluten free, but that nut crust is awesome either way!

Serve up with ice cream or even better a little amber whipped cream. If your pie plate cannot hold the full amount of this filling or you just like this filling it can be used in hand pies or puff pastry.
