Looking for a meal for Lent? Try this Tuna Soufflé vinatge recipe for dinner

So it's the Lenten season and you just might be looking for a meatless dinner that you haven't made before? Or maybe you're just looking to add some fish to the evening meal schedule? Try this yummy Tuna Soufflé from Fleischmann's yeast company.  This recipe is both tasty and frugal making it a great addition to anyone's recipe box! Easy to double as well for larger families or leftovers for the week.




Scald 1/2 cup milk
Stir in 2 tbsp. sugar, 1 tsp. salt and 1/2 shortening. Let cool to lukewarm

In a separate bowl bloom an envelope of yeast in 1/4 cup warm water until dissolved and then add milk mixture to it. To this add 2 egg yolks (save whites for later) and 1 cup sifted flour. Beat until smooth, about 1 min. Leave in warm place to rise for about 40 min.

Pre heat oven to 400 degrees.
In an oven safe casserole dish mix together a can of cream of celery soup, a 7 oz. can of drained tuna, 1 tsp. grated onion, 1 tbsp.. chopped pimento.

Beat egg whites until stiff but not dry. Fold these into the risen batter and pour on top of creamed tuna mixture.

Bake for 40-45 minutes and serve.

Now in our home I would add some more seasoning. Lemon pepper in the least and we would likely use jalapeño to the pimento. A nice salad would go well with this or even adding mixed veggies to the creamed tuna to make it a complete meal.
