Rice Flour Brownies, vintage gluten free recipe with dairy free conversion


When flipping through old cookbooks I am always on the hunt for recipes I can use for my little one with a wheat allergy. I find the best ones come from these books because they aren't trying to make "gluten free" taste like the "normal" stuff. In fact the recipes are to use these flours and ingredients that were on hand in a tasty fashion not to mimic wheat flour products. 
 The best brownies don't use powdered cocoa they use real chocolate which gives not only and amazing flavor but also a rich, fudgy product that is just delectable for all. This recipe has you melting the chocolate over a double boiler and if you do not have one feel free to use a metal bowl over a steaming pot to melt the chocolate. Just be careful not to get any water in the chocolate as it melts or it will seize up like concrete.

To make a variation of this recipe switch out the chocolate for flavored versions such as chocolate mint, raspberry or orange all lovely choices. One can also go a bit wild, there are more distinct versions like chocolate chili pepper that make for more unique flavors.
