Classic Shrimp Jambalaya, Vintage gluten free one pot dinner recipe, Lenten dish

Down South this is a classic comfort food with as many variations as there are people. Some use oysters, some use muscles, (my favorite by the way). There are folks who use okra, olives (yes mine had olives as my kids just like them) mild peppers, hot peppers, chicken stock or seafood stock,  big shrimp, small shrimp...lol this is a basic recipe and play with it as you will.  


We like to serve up a toasty loaf of bar b que bread with a pot of Jambalaya.
