Frosted Delights, Meringue Topped Cookie Bar vintage baking recipe
These Frosted Delights are in a way like a cookie bar version of a macaroon . A basic shortbread is topped with a meringue which is then topped with your choice of coconut flakes or nuts.
Any topping could be used from colored sugars and sprinkles to chocolate chips or crushed candy bars. Fresh fruit can be served on the top or side of these bars like one would with a shortcake.
Not into toppings? Add flavor to the cookie with some citrus zest. More interesting flavor profiles use herbs such as lavander or rose for a delicate flavor. Spices such as cinnamon or chai spice mix are warming and delish.
Or change the vanilla to another flavor such as banana or strawberry. Changing the sugars us can add a mild flavor. Try Maple sugar or honey crystals.
