Cold Marinated Eggplant, Vintage Party Recipe

I am very fond of eggplant... now.  As a child my mother once had a bumper crop of this purple veggie and by the end of that summer I was admittedly so tired of eggplant I didn't eat it again until adulthood. Now though it is one of my favorite veggies to eat. Sometimes fried or in babaganush and often roasted, this though is a cold alternative that goes nicely on any antipasti dish.  Once cooked just marinate at least a few hours before serving.


A little chili pepper never hurt this either!
