Broiled Squab, poultry dinner recipe
Dainty and delicious, squab is more or less a "fancy" food now a days reserved for special occasions and restaurants. This recipe harkens back to a time where you either caught the birds yourself or bought them feathers and all. Today of coarse we just ask the butcher in the local store to clean up the birds. Have the butcher spatchtcock the bird or do it yourself so it lays flat and cook evenly. Unlike most recipes today this one is simple and the serving of it is as well. Just roasted meat on buttered toast. No balsamic reductions or fancy fare, just good simple ingredients and flavors. If you desire a bit more spice poultry seasoning is preferred.
