Keto friendly Spinach Salad
Ok so this is one of my recipes. Working on a version of a keto diet I have been experimenting with salads and dressings. This one is pretty earth with spinach and mushrooms. An acidic vinaigrette helps to cut through the earth tones with some bright flavors. This one pairs well with beef and most game meats as well as chicken or fish. This recipe made 2 lunches.
Note:
Look for bacon cured without sugar for no carbs.
According to my app (my fitness pal) this is about 4 net carbs each serving.

Ingredients:
- 4 cups baby spinach leaves
- 4-5 good size baby bella mushrooms
- 1/4 c roasted sunflower seeds
- 4 pieces of hickory smoked bacon (reserve grease)
Dressing:
- 3 tbs. olive oil
- 1 tsp brown mustard
- 1 tbs. Cider vinegar
- salt and pepper
Wash and dry spinach, cut up if you want smaller pieces. Evenly slice mushrooms and give them a quick browning in the reserved bacon grease. Not cooked mushy just enough to carmalize the outsides a bit. Then toss bacon pieces, seeds, mushrooms, spinach and dressing. Serve warm.
Optional, hard boiled egg crumbles.
