Leftover delight!, Frugal dinner recipe
Have you ever looked in the fridge and there are a bunch of leftovers but not enough to make a meal? This tasty lasagna meets baklava styled dish takes care of just that. Crusty and buttery the phyllo dough becomes the "noodle" of this layered dish. Left over meats, veggie and cheese fill the layers. Now a delish lunch is on the table and my fridge is a little bit emptier! Win, win baby!
Ingredients:
Half a package of phyllo dough
1 stick butter melted
This is pretty simple. Lay out phyllo dough and brush on melted butter, layer on another piece of phyllo and repeat. Each phyllo layer will do this 4 times. In between the phyllo layers do a layer of leftovers. I repeated this several times. The above dish has a layer of broccoli with cheddar cheese, a layer of chicken, a layer of cheddar cheese, a layer of spiral sliced ham and one more layer of cheddar cheese.
These layers can be any leftover you feel tastes good together. A few of my other favorite combos I'll leave below. This can make a great brunch item as well. Layers of scrambled egg, bacon, sausage, spinach etc.
My top 3 favorites:
Chicken, cheddar cheese, jalapeño popper dip, bacon and kale
Roast beef (or pot roast), sautéed onion, pepper and mushroom mix, spinach, horseradish cream
Scrambled eggs, pork roll, Mac and cheese shred mix (cheddar and American cheese mix), chopped onions and peppers.
