Yummy Keto friendly Bacon Cheeseburger Soup Recipe the whole family will love!
Is your family ready for summer flavors but the weather is not cooperating? What do you do? Yummy Keto friendly Bacon Cheeseburger Soup Recipe the whole family will love!
This is a very easy and quick recipe that is all in 1 pot and satisfyingly delicious meal. Re heats well for lunch the next day too! Now I know there are all sorts of versions out there of this soup and to each their own. This is how we make it here and we love it!
Ingredients:
2 lb ground beef
1 package (8 oz) cream cheese
1 package shredded cheddar (2 cups)
6 slices peppered bacon
1 tsp. Paprika
1 small onion chopped small
1 tbls minced garlic
1 cup heavy cream
1 can tomato paste (6 oz)
2 tbls. Brown mustard
6 cup beef bones broth
1 cup chopped spicy dill pickle (if you don't like heat use regular dill pickle)
Salt and pepper to taste
Cut bacon into small pieces and brown in your soup pot. Once browned nicely remove and let drain on a paper towel. In grease gently cook onions until just soft. Add ground beef and brown. Add garlic, paprika, salt and pepper then stir in until fragrant. Now push meat around edges of pot to make a bare spot in the middle. Put cream cheese on bare spot and let it soften, as soon as it is mixable stir in meat mixture. Now add cheddar and let it melt for a minute. Next add in heavy cream and stir until mixed. Do the same with the tomato paste and mustard. Once mixed in we'll add broth and bring to heat. Last but not least dump in the pickles and bacon.
Serve as is for keto meal. If you have non keto folks serve with a seasame roll or french fries. In our home half of us add sliced jalepeno as well for a little kick!
