Recipe Day ~ Scotch Collops




So to be honest I had to look up what collops were. The seem to be the "bacon" cut of meat off of I believe any animal. Veal collops were considered "fancy" food and in fact were served on the Titanic as a breakfast food. Most Americans do not think of veal as a breakfast food but why not?  I love the note on the bottom of this recipe.  Apparently it's origin was from a manuscript from 1825 written by a Miss Margret Prentis of Williamsburg (Virginia) and owned by someone else. Very interesting.
