Tomato and mozzarella salad recipe
Tomato Salad |
It's getting to the end of the summer and the tomato plants are in full fruiting. The cooking and canning are under way and the feeling of being over come with the globes of yumminess are starting. What am I going to do with all of these tomatoes! Salad of coarse! This delicious bruschetta style salad is a great way to use the tomatoes and is perfect for the end of season bar b ques and picnics! Easy to make and can be used to create other meals!
Ingredients:
1/2 lb. tomatoes
8 oz. mozzarella pearls drained
1 garlic clove minced
5-6 large basil leaves chopped fine (1/2 tsp. dried) add more if you like
3 tbls. olive oil
salt and pepper to taste
Chop tomatoes into bite size pieces and toss with other ingredients. All done! That's it super easy and quick!
Meals:
Serve with bread for a light lunch.
Top off steaks either beef, bison, venison, or pork.
Sautee with seafood such as shrimp or scallops.
Top off baked fish such as tuna or flounder.
Toss with pasta hot or cold
Baked on top of flat bread or pizza dough
