Gluten Free Sugar Cookies
- 1.5 sticks butter
- 1 cup sugar
- 2 large eggs
- 3 ¼ cups All Purpose Gluten Free Flour* Blend (With Xanthan gum if not add 1 tsp of gum)
- 1 teaspoon gluten free baking powder
- ½ tsp vanilla extract
- ½ tsp orange or lemon extract
* Bob's Red Mill Brand Gluten free Baking Flour 22. oz package use whole package.
Preheat your oven to 350F
- Cream together margarine and sugar.
- Add in eggs and extracts and mix until combined.
- Put the dry ingredients into another bowl and mix by hand to combine the gum and baking powder.
- Add the dry ingredients to the sugar and egg mixture and mix well to combine.
- Put in fridge to firm up at least half hour up to overnight.
- When the dough has hardened roll it out on parchment paper, extra flour can be used but only with out the gum or cookies will get weird texture on outside. I sandwich the dough between parchment as I roll it out so that it doesn't stick to the rolling pin, Then cut them with cookie cutters.
- Bake cookies for 12 - 14 minutes at 350F on a parchment lined baking sheet.
- Important Allow to cool on baking sheet, the cookies will firm up once cooled or they will break.
- When they are fully cooled they are ready for decoration
