Peach Bars of the Gluten free persuasion!
I wanted to make something for our Church picnic but of coarse wanted our youngest to be able to eat it as well. I asked what she wanted and she said fruit bars (she can eat these short bread, fruit topped bars with just about any fruit). So I jumped on Pinterest and started looking around and didn't find much. So I grabbed out my tried and true recipe full of gluten and started playing. It took a try or two but these bars were born and they are delicious!!! They were gone quick and no one who grabbed them up even realized they were gluten free. For me this is a feat to be proud of! So above in the picture I used fresh peaches cooked down to a scrumptious filling, but any fruit or pie filling can be used. Another try lead us to use the filling for raisin filled cookies and these were fabulous!
Fruit filling
- 1 lb. pealed and diced peaches
- 1 cup sugar
- 1/2 tsp each ground cinnamon, ginger and clove or 1 tsp, pie spice
Heat peaches and sugar up until a boil. Stir often and simmer for about half hour to 45 minutes. Filling will be thick and sticky.
While cooking down the peaches mix together crust. and bake at 350 for 20 minutes.
Crust ingredients
- 1 box of Gluten free baking mix ( this is about 3 cups of a gluten free mix)
- 1 cup sugar
- 2 stick of butter melted
- 1/2 tsp vanilla
Mix together. In a parchment lined pan and press 3/4 of mix into bottom and bake at 350 for 20 minutes until a light golden brown.
Topping
left over crust mix
1 cup rolled oats
1/2 stick butter melted
Mix together until a crumble.
Pour peaches over crust then top with topping. Bake for 30 minutes at 350. Let cool completely and pull out by the parchment paper. Cut into 2 inch squares and serve.
