Pumpkin Goodness


So when Avon came out with this uber cute pumpkin pan I knew not only did I have to have it I knew which recipe it would be perfect for!  Now I use fresh pumpkin cooked down and smashed but canned can be used of coarse.  For those who do not like to use booze can use cinnamon powder and extra milk.  This is a pretty dense cake an done we love.

Pumpkin Spice Cake with Cinnamon Whiskey Frosting
Ingredients
  • 2 and ¼ cups flour...
    2 tsp. baking powder
    1 tsp. baking soda
    2 tsp. cinnamon
    3 tbs. Pumpkin pie spice
    1 and ⅓ cups pureed pumpkin ( 1, 15 oz can)
    ¾ cup buttermilk
    1 tsp. vanilla
    1 cup unsalted butter, softened
    1 cup granulated sugar
    ¼ cup brown sugar
    3 large eggs 
1 cup chopped walnuts and or raisins (optional)
 Instructions:
Preheat oven to 350°. Spray your Avon pumpkin pan with cooking spray or butter well. Mix the dry ingredients in a bowl. Mix pumpkin, buttermilk and vanilla in another bowl and set aside. In the bowl beat the butter and sugars until fluffy, add eggs and beat. Reduce speed to low and add flour and pumpkin mixtures, alternating. Fold in nuts. Pour batter 50/50 into prepared Avon pumpkin pan. Bake for about 30 minutes before checking. Cool about 10 minutes and remove from pan. Let cool. While cooling make frosting.
Cinnamon Whiskey Cream Cheese Frosting
3/4 unsalted butter softened
1 package (8oz) cream cheese softened
2 tbs. Cinnamon Whiskey (I use Bird Dog)
3 cup confectionery sugar
1-3 tsp. Milk if desired for thinner
A mixer is nice for this recipe. Cream together butter and cream cheese. Add whiskey and mix smooth. Slowly add sugar 1/4 cup at a time while mixing. Do it slow to avoid lumps. If you want thinner or more spreadable out come add milk slowly until just right or more whiskey if you want a bigger bang!
On a plate place bottom of the cakes round side down. Use a small amount of icing to make a 1/8 - 1/4 inch layer. Place other cake flat side down. Don't push down. Frost as seen in picture or the whole cake! Use a tootsie roll for stem and gummy leaves ( gum paste was used in picture but gummies are easier).
