Jalepeno Popper Fish, Easy dinner

With a large family to feed I am always on the hook to come up with tasty dishes for them to eat. An absolute favorite in our home is Jalapeno popper. Be the poppers, the dip or things topped or filled with said dip.  I am also always in need of quick dinners. Between youth groups and dance classes, co-ops and 4-H we run around most nights of the week meaning I don't always get to be the home based gourmet chef. Hence this dish was born!

So after a weekend get together we had jalapeno popper dip left over. What could I put it on that would make it a little different? Lets try the fish we have in the freezer! And a yummy new favorite was born! How did I do this you ask? First I  used gluten free bread crumbs to fry up the pollack. Not into frying up your own fish? Use store bought or skip the frying and used grilled, up to you. Then with our leftover  popper dip (recipe below) spooned on top of each piece of fish I added some shredded cheddar and broiled quick. About 5  min until the cheeses were melted and lightly browned.

Popper Dip

 Popper dip-
 8 oz cream cheese
 8 oz sour cream
 5 sliced browned and crumbled bacon
4 oz shredded cheddar
2 small diced jalapenos... We love them so I used about 8 smallish sized ones.

Very simple dip, just stir together starting with the cream cheese and sour cream until smooth. Dump in everything else and stir well. sprinkle a little extra shredded cheese on top and bake at 425 until hot a bubbly about 15 min. mattering on your oven.

 We eat as a dip and a topper on burgers or chicken and then we decided to try this!
