Gluten free and Keto, Country Gravy Casserole Recipe



As someone eating in the keto fashion and having a gluten allergy in the home I was hard pressed to find a country gravy recipe we could all enjoy together.  My family all loves this down home comfort food and though it can be served on potato instead of biscuit it still was no where near gluten free or low carb.. that is until now!




I subbed out the bread element with boiled eggs figuring if anyone in the family wanted bread toast could easily be served up with this. Excuse the multi colored eggs used as the bottom of this casserole. We just did an Easter egg hunt and literally 5 dozen hard boiled eggs came home. Part of creating this recipe was the need to use those up!






Ingredients:
1/2 lb loose breakfast sausage browned
10 hard boiled eggs sliced or chopped
1 small chopped onion
1 cup shredded cheddar (I used a bacon cheddar)
1/2 cup heavy cream
4 oz cream cheese cut up




Place boiled egg in a casserole dish and sprinkle on half the cheese. I sprinkled on some black pepper as we like it and know this sausage could use some. Due to the salty nature of the sausage I did not use salt but use your own discretion as to if you want to add some or not.
As you brown your meat add the onion to cook it until soft.  Once all cooked and crumbly add the cream cheese and mix until all melted and meat is thick. Add the heavy cream and stir until creamy. Here is your Keto country gravy. Serve up at this point however you would like to eat it.  

Pour the meat mixture over the eggs in dish and top off with the rest of the cheese. Bake at 350 degrees for 15-20 minutes or until the top is a lovely brown. 



Serve up with biscuits, toast or potato for your none keto diners.  The flavors in this recipe can be easily manipulated with the use of different flavored sausage. Hot and spicy, sage or maple are all very common.
