Ice Cream Treats

This Avon lady loves ice cream but with health concerns and a strict diet, ice cream just isn't one of the treats I can have, like ever.  Or could it be? Well in a way yes. Traditional ice cream has a lot of sugar and carbs and fat and.. and.. and... you know the story.  Store bought frozen yogurts are no better at all.  So I started playing around to get a treat I can love that will satisfy the ice cream craving without being a total drag to my diet.  Here is an easy one I have been using.

* Note this is not a diet food. It is a recipe that I played with to lower the carbs and fat. I did this with sugar replacements and using fruit as the majority instead of cream.

Ingredients

  • 3 cups fresh or frozen berries (about 1 lb. Blue, black or strawberries are good but be adventurous try a mix or Loganberry or as above elder berry)
  • 3 Tbsp. lemon juice
  • 1/4 cup to 1/2 cup of stevia/monk fruit powder (depending on how sweet your berries are, and how sweet you want the result to be use up to a cup)
  • 1/4 tsp. salt
  • 1/8 tsp. vanilla  (optional)
  • 1 1/2 cups full fat plain yogurt (full fat yogurt is preferred, if you use low-fat or non-fat yogurt, substitute 1/4 cup of coconut oil for a healthy fat that will smooth out the texture)
  • 1/2 cup whole milk
Mix well and chill very well. This is important. The colder the mix is before putting it in machine the quicker and smoother it will freeze. Each machine  is different so use your ice cream maker's directions for churning. Mine takes about 15 min when it has a real good chill before going in.  Serve soft or harden in freezer but note keep in an air tight container or crystals will form. Part of the ice cream experience is the fun. Make eating an alternative a bit more fun to help trick the mind. Fun serving vessels, fresh mint leaf, or harden in ice pop trays to help add the feel of a treat.
